The distinctive flavours and fragrances of Tandoori clay ovens are mainly responsible for the sumptuous Royal dishes produced at RARA. For those unfamiliar with the reknown Tandoori cuisine, “Tandoor” is the name of the traditional clay oven fired by charcoal, used widely in North India and Nepal. It is used for bar-be-queing meat and poultry and baking traditional Indian breads. The delicately prepared meats are then placed on skewers and the intensity of the heat radiated within the Tandoor, seals the juices of the meat, thus keeping it moist, succulent and well flavoured.
